Its getting to be that time of year when the Zucchini's start taking over the world...or so it seems. I remember as a child that once those zucchini's started getting ripe mom would send us all over the neighborhood to give them away to people...just so she wouldn't end up with tons of rotting veggies in the back yard. Of course the neighbors loved to see us coming with our wagon full of all the "extras", including peppers, tomatoes and whatever else we could cram in there. Some offered to pay us for our goods but we always declined. Of course, there were a few who wouldn't hear of it and "forced" their pocket change on us. We always made sure we went to thier houses first...so we didn't run out before we got to them. *Wink wink. Those 10 cent bottles of pop from the gas station pop machine down the street sure tasted good on a hot summer day after dragging that wagon all over the neighborhood.
I found this recipe for Butterscotch Zucchini Bread on the internet. I haven't tried it yet but it sounds like a fun and different way to use up some of summers bounty. Let me know if you make it, I'd love to hear your results!
BUTTERSCOTCH ZUCCHINI BREAD
3 Eggs
1 C oil
2 tsp Vanilla
2 C Sugar
2 C Grated Zucchini
2 C Flour
1 tsp Baking Soda
1 tsp Salt
1 tsp Cinnamon
1/2 tsp Ginger
1/2 tsp Nutmeg
1/4 tsp Baking Powder
1/2 C Rolled Oats
1 (3.4 oz) pkg Butterscotch Pudding Mix (cook n serve)
1 C Nuts or 1 C Raisins or 1 C Dates
LEMON FROSTING
2 C Confectioner's Suger
1/2 tsp Grated Lemon Peel
2 Tbs Lemon Juice
1/4 C Butter
Mix bread ingredients. Pour into 2 greased, floured, wax paper lined pans. Bake 1 hour at 350 degrees. Blend ingredients for lemon frosting and spread over tops of loaves after cooled.
Makes 2 Loaves
Per Serving (excluding unknown items): 462 calories;23 g Fat; 5 g Protein; 62 g Carbohydrate; 2 g Dietary Fiber; 43 mg Cholesterol; 292 Sodium.

I'd love to try that hazelnut/rye approach in our stored-dough method. First, I'll try to find the hazelnuts! Thanks for posting to Jaden's site, hope I answered your question...
