Here's a recipe for some yummy cookies that just "scream" sunshine! This recipe uses a boxed cake mix so changing up the "flavor" would simply mean using a different flavor cake mix. Easy Peasy!
Lemon and White Chip Cookies
Box of Lemon Cake mix
Sm box instant lemon pudding
2 eggs
1/2 C oil or unsweetened applesauce
1/2 package of white chips
Combine cake mix and pudding powder
in separate bowl combine the eggs and oil (or applesauce)
Slowly work into each other. You may need to add just a tad bit of water to bring it to cookie dough consistency.
Work in 1/2 package of white chips and drop dough by tablespoonfuls onto an un-greased cookie sheet, about 2 inches apart.
Bake in a 350 degree oven for 8-10 Min's max. Do not over bake. Cookies will look just barely browned around the edges.
Cool on cookie sheet 2 Min's then transfer to cooling rack.
