What do you do when the wind is howling and the snow is blowing? I Bake!!
I wanted to try something new so I rummaged through my ever increasing array of cookbooks and found a cookie recipe that seemed like just the right amount of work...nothing major. A short ingredient list also seemed encouraging. I thought these came out pretty good and were pretty easy. Give em a try, tell me what you think.
Chocolate Chip-Oat Cookies
1 package (18 1/4 oz ) yellow cake mix
1 tsp baking powder
3/4 C vegetable oil
2 eggs
1 tsp vanilla
1 C uncooked old-fashioned oats
3/4 C semisweet Chocolate Chips (I used M&M's)
Preheat oven to 350 degrees. Lightly grease cookie sheets or line with parchment paper.
Stir together cake mix and baking powder in large bowl. Add oil, eggs and vanilla; beat by hand until well blended. Stir in oats and chocolate chips.
Drop dough by slightly rounded tablespoonfuls 2 inches apart onto prepared cookie sheets. Bake 10 minutes or until golden brown. DO NOT OVERBAKE.
Let cookies stand on cookie sheets 5 minutes; transfer to wire racks to cool completely.
Makes 4 dozen cookies
